I love bacon - seriously it's a huge part of my life. I also enjoy entertaining and having parties with fabulous food that my friends and I cook that tastes incredible and seems difficult, but is super easy to make. Sweet and savory/salty is always a good combo and one of my favorite recipes I always get asked about is dates and bacon. The thing is...there really is no recipe it's pretty much in the title. Dates & Bacon.
- bacon slices,
- Pitted Medjool dates
- soft blue cheese or gorgonzola
- toothpicks, plastic baggy or pastry bag
Preheat oven to 375 degrees F.
Cut the bacon thirds. Set aside. Place the cheese in the bottom corner of a strong plastic bag (or use pastry bag) and seal tightly. Use scissors to cut a small hole in the tip of 1 of the corners. Use the bag like an icing bag to fill the dates with cheese. If the dates are too small you can slice them almost in half and fill with cheese that way.
Wrap stuffed dates with a 3rd of a slice of bacon and secure with a toothpick. Place on baking sheet with tin foil. Cook until bacon is browned and crispy. Serve warm.
*If you are not into cheese you can always leave it out and just make with the bacon.
These are also delicious with a little lavender honey drizzled over them.
